Sweet Potato Recipe

By popular request, here's a recipe for my baked Sweet Potatoes:

Ingredients:
2 large sweet potatoes (about 750g or 1.5lb in all)
2 tbsp brown sugar
1.5 tbsp balsamic vinegar
2 tbsp canola oil
half tsp salt
freshly ground black pepper

Pre-heat oven to 180 C (350 F). Meanwhile, peel your sweet potatoes and chop them into cubes of about 1 inch (no larger).
Take a baking pan that is long and shallow (e.g., 10in X 14in X 1in). Oil the base of it.
Dump all the sweet potato cubes in it. Now sprinkle over your brown sugar, balsamic, oil, salt and pepper. The salt is optional, of course.
Using two metal spoons, mix the sweet potatoes around so they become coated in the dressing.
After mixing, pat down the potato cubes into 1 layer over the base of the pan. This will help them to cook evenly.
Put the pan into the oven and roast for 45min to 1 hour.

At 1 hour, the cubes should look golden, glistening, and kind of shrunken: this means they will be extremely tender on the inside.

  1. Thanks, I will try this... it sounds a lot healthier than my sweet potato casserole that has almost as much brown sugar and butter as potatoes and pecans.

  3. this sounds wonderful! i love sweet potatoes just about every way i ever had them. usually plain baked really really soft, i mash it up skin and all and eat the whole thing...

  4. oh lordy these sound delish! I am going to do this [thanks for the salt tip - reminder to self, no salt] and probably add in the pecans that Sage mentioned because I think our casserole version is the same as hers, but we have to have the nuts. :D This will be so much healthier. YUM
